Bodegas Perez Barquero Fresquito Pedro Ximénez 2016

One of the few Montilla-Moriles wines widely available in the UK via Marks and Spencer Fresquito Pedro Ximénez is a tinaja wine.
Checking the fermentation
Initial fermentation takes place in stainless steel tanks then it is moved to the tinajas, large concrete jars previously fabricated from clay.

The 2014 versus 2015 Fresquito Off
We then had a Fresquito taste off in August 2017 where we reviewed the 2014 vintage versus the 2015 vintage here.
Now onto the 2016 vintage which we tasted in December 2017.
Again this wine is made from 100% Pedro Ximénez grapes and has an ABV of 14%.
Our Tasting Notes
Nose: Peach skin, green apple with slight yeast, under ripe strawberries and cold weak tea.
Palate: To start there is peaches, mango, Bramley apples and Bergamote lemon . The finish has a slight hint of ginger and mint leaf.
This once again is a fantastic example of a tinaja wine and it is refreshing to see that this wine has now been available for 3 years in the UK.
