We first came across this bodega and Fino at the Feria del Vino de Tinaja y la Gastronomía de Montalbán in March.
This which would lead to a visit to the bodega later in our trip while driving through Moriles. A post on this visit will follow in due course. It was during this visit we purchased a bottle to bring home and review.
Fino San Pablo
This is a Fino from 100% Pedro Ximénez grapes with 3 years biological ageing under a velo del flor, layer of yeast.
It is a wine that owns all the characteristics of the famous wines of Moriles.
A bright golden straw colour, it is bitter in the mouth and has a magnificent and sharp scent in the nose.
Food Pairing – This fine is especially indicated to accompany the Mediterranean diet.
Serve between 6 and 8 degrees Celsius.
Nose: Walnuts, almonds, yeast, wood and plums.
Palate: What you would have expected from the nose. Continuation of the almonds, wood and yeast. A chalky minerality with a hint of plums
Finish: – Minerality then Plum.
A fine example of a Moriles Fino which sadly isn’t available in the UK.
