The background to the naming of the Fino El Pato Especial (the Special Duck) was explained in our recent article on Day 3 of our September visit that included Bodegas Luque here.
Produced from 100% Pedro Ximénez grapes with an ABV of 15%, this fino en rama has spent on average 2½ to 3½ years biologically ageing in old American oak barrels under a velo de flor or layer of yeast.
Nose: This has a yeasty aroma with under-lying notes of sherbet lemons
Palate: The yeast comes through first tasting like sour dough on the palate. This then develops into salted almonds with a slight hint of ginger.
This is our first review of a bottle that we have seen being filled with wine, the label being applied and the closure being sealed as seen in the video below. It is one of the bottles in the video that we bought back to Scotland.
