One of the wines we tried with Javier was the Fino Segunda Bota. We bought a bottle of it to bring home so that we could review in more depth and at our leisure.
This is made from 100% Pedro Ximénez grapes sourced from the Moriles Alto. At 15% ABV, it has has spent 7 years ageing under flor with rigorous quality control in a solear and criadera system of American oak casks.
Consumption and Tasting: Especially suitable for having a few drinks with tapas. Excellent match with good ham, cheese, nuts and olives. Wine of aperitivo par excellence. Serve cold between 12º and 14º.
Colour: Golden yellow and pale, bright with greenish tones.
Nose: Sharp, frank aromas, clean. It evokes the flower and saline notes. Persistent and broad.
Palate: Dry and prickly, On the palate flower and nuts souvenirs. It is tasty and persistent. Predisposes to the second glass.
Nose: Toasty, salted almonds and lemon with a very powerful aroma
Palate: Nutty – saltiness and almonds, sharp acidic finish with slightly butter notes.
